A tricky to find cut these days, this middle neck of lamb (otherwise known as lamb scrag) is an essential ingredient for Irish strews and Lancashire hotpots. Cook it low and slow to drive maximum flavour, and after a few hours it'll melt away from the bone.. Sourced from herds that graze on the Kent Romney Marsh, you'll pick up the unique flavour provided the lamb's natural diet of grasses and samphire that grow across the salt marshes.
