The team start with wild garlic that's freshly foraged during the Spring months, and put it through a rather interesting fermentation process that produces, in their words, a garlic smell that was "so strong and so pungent" that they wondered if they'd done the right thing. But a slow and steady process paid off, ultimately producing a subtle and complex flavour that will transform roast lamb, chicken, burgers or vegetables..
